It actually has to do with mexican diet being filled with fiber and nutrients due to legumes like lentils and beans.things like nopales are also extremely nutritious. Mexican food by default is also mostly organic. The only down side to a mexican diet is the high amount of lard we use in everything.Now I understand why your all's life expectancy is far greater than ours.

Is that wrong though?And there's no getting around it. Grilled meat is healthy but add any tortilla and thats filled with lard. Then, the sides. Especially, if you start with chips and salsa. 4 chips = 1 tortilla. By the end of the night, you've had a cool dozen.
