I have a electric materbuilt. Seems like I have to allow at least a couple hours extra for big meats and pull the water halfway though or you dont get that bark on the outside. Also dont expect a very heavy smoke flavor. I like mine but its alot different than charcoal or wood. Also you will wish you had got the bigger one. Yours looks about same size as mine and I have to cut ribs in half. Definitely smoke steelhead or salmon on there, just remember to pull the water pan or it will be mushy.She bought this electric one. I drank a 15 pack of Natty and decided to break it in with chicken. It was a impromptu decision. I learned about pulling the water pan through trial and error. I'm going to try a pork shoulder Saturday. Will rub and refrigerate it tomorrow, and throw it in the smoker around 9am Saturday. You will enjoy the set it and forget it feature. I cook in foil pans but use wire racks in the pan so the meat isnt sitting in the drippings all day.
Forget almost everything you know about cooking on your weber but give it a few cooks before hating it. You will fuck a couple up. Food will be good but not what you expect from yourself.
When should I pull the water pan?Throw it on As soon as you wake up. And make sure you soak wood chips. Dont expect to see alot of smoke coming from top after you pull water pan but it will still be smoking. And if you smoke at 220 on charcoal bump it up 10 degrees for electric at least. Maybe 15.

I think Washington's secondary can cover Auburn's receivers 1 on 1, freeing up 7 & 8 man rushes on an Auburn O-line w/ 4 news starters. Washington's talented defense isn't the team you want to try to build O-line continuity against. Auburn is one of the best defenses in the country, but this is a game where Peterson is going to empty the Boise St. trickeration playbook out on them.
