As soon as the steaks hit 110 I put them on the Napoleon's "sizzle zone." It's the first time I've used it and holy shit does it work. Only takes about 30ish seconds per side.

ended up making street corn tonight, we have a chipotle mayo we use in a lot of sauces, threw some old bay on it and baked for 3 hours.

Only way to do it. The women are brainwashed about the "fat content". If I gotta deep fry something it's gonna be unhealthy. No matter the oil. Mine just brings the crunch needed.
